Food

Casoncelli alla bergamasca

An iconic dish of the Bergamo culinary tradition. These are ravioli stuffed with a filling made from minced meat, amaretti, breadcrumbs, eggs and a mix of aromatic spices. They are served with melted butter, crispy bacon and flakes of Grana cheese

Polenta taragna

Polenta taragna is a variant of the classic polenta, prepared with a mix of corn flour and buckwheat, which gives it a dark colour and a more intense flavour. It is enriched with local cheeses such as Bitto PDO, Casera or Branzi.

Polenta e osei

This dish combines polenta taragna with the delicacy of birds, once hunted and now often replaced by meats such as chicken or pork. The birds are cooked on the grill or in a pan, while the polenta is cooked in the copper pot.

Stracciatella ice-cream

This flavour was born in Bergamo in 1961 in the "La Marianna" ice cream parlour. The name comes from the gesture of "shredding" the chocolate inside the cream. Today Stracciatella is appreciated all over the world, remaining one of the symbols of Bergamo's gastronomic excellence.

Bergamo cured meats

Cured meats are a true excellence of local cuisine. Among the most appreciated are salami, coppa, bacon and bresaola, all prepared following traditional methods that enhance their authentic flavours.

Donizetti cake

La Torta Donizetti is a cake dedicated to the famous Bergamo composer Gaetano Donizetti. This cake is a large and fluffy donut enriched with pieces of pineapples and maraschino-flavoured candied apricots.

Scarpinocc

Scarpinocc are a typical dish of Parre, in the Seriana Valley. This variant of casoncelli is prepared with a mixture of stale bread, grated cheese, eggs and spices. The name means "priest's shoe" and comes from their shape reminiscent of a small shoe.

THE EUROPEAN CAPITAL OF CHEESES

Cheese excellence between taste, art and tradition.

Formai de Mut DOP

Produced in the Upper Brembana Valley, it is a semi-knitted fatty cheese made from cow's milk in the pastures. It has a thin and compact crust with a straw-yellow colour, while the ivory-coloured paste has an elastic structure with a characteristic diffuse holes or air pockets.

Provolone Valpadana DOP

Spun and semi-hard fat cheese made with cow's milk. It stands out for the great variety of shapes and weights, thanks to the plasticity of the curd during processing. The most classic shapes are the cylindrical "salami" shape, the elongated melon shape and the ancient pear shape with a bulge.

Taleggio DOP

A soft cheese from the ancient origins of the Brembana Valley, it has a sweet and aromatic flavour. With its pink crust covered with grey-green moulds, it offers a soft paste on the outside and crumbly in the centre, making it easily digestible.

Gorgonzola DOP

Soft cheese made from cow's milk. It has a cylindrical shape, non-edible grey crust and straw-white cheese colour characterised by typical blue-green speckling due to the marbling process (mould formation).

Grana Padano DOP

Hard cheese, cooked and slowly aged, made with cow's milk. Semi-fat and aged for an average of 16 months, it has a finely grained texture of white or straw colour, enclosed by a hard, dark yellow crust.

Bitto DOP

Fatty cheese with cooked and semi-hard paste made with whole raw cow's milk processed in the pasture immediately after milking. The crust is straw yellow, while the white straw cheese has fine holes.

Quartirolo Lombardo DOP

Soft table cheese made with cow's milk from cows raised exclusively in the production area. Its name derives from the term "quartirola", referring to the grass of the last cut before winter (fourth cut).

Salva Cremasco DOP

Raw, soft cheese made from whole cow's milk. It has a white paste, compact and crumbly, softer near the crust. The name “Salva” comes from the fact that it was once produced in May to save the dairy economy by using surplus milk.

Strachítunt DOP

Its name in dialect means "round stracchino", it is a cylindrical cheese from the stracchino soft cheese family with natural blue-veined effect. With a thin and wrinkled crust of yellowish or grey colour, it is unique because it is produced in a restricted geographical area of the Taleggio Valley.

Wine

Valcalepio DOC

The Valcalepio Doc is one of the most representative denominations of the province of Bergamo and includes two main types: the Valcalepio Rosso and the Valcalepio Bianco.
- Valcalepio Rosso is a blend of Merlot and Cabernet Sauvignon. It offers a structured wine with notes of berries, spices and an elegant finish, aged in oak barrels.
- The Valcalepio Bianco, made with Chardonnay and/or Pinot Blanc and Pinot Gris, is fresh and harmonious, with hints of white flowers and citrus.

The wines of Franciacorta

Franciacorta, although located in the province of Brescia, is an important wine-producing area that completes the oenological offer of the Bergamo territory due to its geographical proximity. This area is renowned above all for Franciacorta DOCG, a classic sparkling wine of great international prestige, produced mainly with Chardonnay, Pinot Nero and Pinot Bianco grapes. With its fine and persistent perlage, it represents Italian excellence in the world of bubbles. Available in Brut, Extra Brut, Satèn, Rosé and Millesimato versions, Franciacorta is perfect as an aperitif or to accompany an entire meal of fish or white meats.

Moscato di Scanzo DOCG

Moscato di Scanzo DOCG is one of the smallest and most prestigious DOCG in Italy, produced exclusively with Moscato grapes in the Scanzorosciate area. This passito wine stands out for its sweet and aromatic flavour, with notes of ripe fruit, spices and a persistent finish. A real oenological treasure, perfect to accompany desserts or aged cheeses.

Terre del Colleoni DOC

The Terre del Colleoni Doc appellation is one of the most recent in the province of Bergamo and focuses on wines produced in specific areas of the territory. This DOC enhances local vines and oenological traditions, offering a range of wines ranging from structured reds to fresh and aromatic whites.
